I am the Culinary Director of the Sailing Collective.  The company offers bespoke boat charter service for private groups as well as open trips where guests can book a single cabin. We have over thirty different itineraries spanning most of the Mediterranean & Caribbean, as well as journeys in Mexico, Madagascar, French Polynesia, and Thailand.  The company has a team of roughly 15 chefs that I train and manage along with cooking for roughly 20% of the annual charters.
